Cheesecake cupcakes with peanut butter cup filling, rasberry sauce, and vanilla wafer crust.
Pre-heat oven to 350°
Filling
1lb Room temp. cream cheese
2 eggs
1/2 cup sugar, white or raw, I used raw because that is what’s available.
1 tsp vanilla extract. I used vanilla syrup because that is what was available.Mix together all the ingredients with a hand or stand mixer on medium speed ( I had to use a blender, also acceptable) Until smooth, it will be runny, this is perfectly fine.
Place in fridge until your crust is ready.
Crust
1 1/2 cup vanilla wafers, crushed
1/3 cup melted butterPlace ingredients in a bowl and mix to combine. Place about one tablespoon in the bottom of a muffin pan with liners, and press evenly until flat. Refridgerate until firm, about 30 min.
If fillings are desired, place them on top of the crust before filling. Get creative! Gummy bears, peanut butter cups, cherry filling, what ever you want. If using filling, just barely cover it with the cream cheese mixture, if not, fill cups about 1/2 to 3/4 of the way full. The filling should do about 12 standard muffin cups. Bake for 15 min, or until the center is set. If you’re unsure, give the pan a little giggle and it should shake a bit like jello. Remove cups from the pan carefully onto a wire rack, and cool in the fridge for about an hour. Enjoy your lumps of joy!
